Preparation time: 20 minutes
Cooking time: 15 minutes
Total time: 35 minutes

Ingredients:(Servings: 4)

1 pound fresh salmon fillet

1/2 cup breadcrumbs

1/4 cup finely chopped onion

1/4 cup minced fresh chives

2 cloves garlic, minced

1 large egg

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

2 tablespoons olive oil (for frying)

For the Garlic Sauce:

 1/2 cup Greek yogurt

1 tablespoon lemon juice

1 clove garlic, minced

1 tablespoon chopped fresh chives

Salt and pepper to taste

Instructions:

Start by cooking the salmon. You can either steam it or bake it until fully cooked, about 15 minutes. Let it cool down, then flake it into a bowl.

In the bowl with the flaked salmon, add breadcrumbs, chopped onion, minced chives, minced garlic, egg, Dijon mustard, lemon juice, salt, and pepper. Mix everything together until well combined.

Shape the mixture into small patties, about 2-3 inches in diameter.

In a large skillet, heat olive oil over medium heat. Once the oil is hot, carefully add the salmon patties to the pan.

Cook the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.

While the patties are cooking, make the garlic sauce by combining Greek yogurt, lemon juice, minced garlic, chopped chives, salt, and pepper in a small bowl. Mix until smooth.

Once the salmon cakes are done, remove them from the skillet and let them rest on a paper towel to absorb any excess oil.

Serve the salmon cakes warm with the garlic sauce on the side for dipping.

Notes:
Feel free to add your favorite herbs or spices to the salmon mixture to customize the flavor! You can also serve these cakes with a fresh salad or over a bed of greens.
