Salmon Power Bowl with Asparagus, Avocado, Mushrooms & Sauerkraut

A nutrient-rich, gut-friendly, flavor-loaded bowl featuring tender baked salmon, crisp asparagus, buttery avocado, sautéed mushrooms, and tangy sauerkraut all served over fresh greens. Clean, balanced, and packed with vitamins, protein, and healthy fats.

For the Salmon

1 salmon fillet

1 tsp olive oil

Salt & pepper

½ tsp garlic powder (optional)

½ tsp paprika (optional)

For the Vegetables

1 cup asparagus spears

1 cup sliced mushrooms

1 cup sauerkraut

1 avocado, cubed

1 cup fresh spinach or lettuce

For Sautéing

 

1 tsp olive oil

 

Salt & pepper

 

 

Cook the Salmon

 

Season salmon with salt, pepper, garlic powder, and paprika.

 

Bake at 400°F (200°C) for 12–14 minutes or pan-sear for 3–4 mins per side until flaky.

 

Cook the Asparagus

 

Toss asparagus with olive oil, salt, and pepper.

 

Roast for 10–12 minutes or sauté for 5–6 minutes.

 

Sauté the Mushrooms

 

In a pan, heat 1 tsp olive oil.

 

Add sliced mushrooms, season with salt & pepper, cook 5–6 minutes until soft.

 

Prep the Fresh Ingredients

 

Cube the avocado.

 

Rinse the greens and pat dry.

 

Assemble the Bowl

 

Lay greens at the base of the plate.

 

Add cooked salmon chunks, asparagus, mushrooms, avocado, and sauerkraut.

 

Season lightly with pepper if desired.
