Ingredients
1 lb smoked sausage or kielbasa, sliced into ½-inch rounds
1½ lbs baby potatoes, halved (or russets, chopped into chunks)
2 cups green beans (fresh trimmed or frozen)
3 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp dried Italian herbs (or thyme/rosemary)
Salt & black pepper, to taste
Optional: ½ cup shredded cheddar or mozzarella (for a cheesy top)
Instructions
1. Preheat Oven
Preheat to 400°F (200°C). Grease a 9×13-inch casserole dish or large baking dish.
2. Prepare Ingredients
In a large bowl, toss potatoes with olive oil, garlic powder, onion powder, herbs, salt, and pepper.
Add sliced sausage and green beans; toss to combine.
3. Assemble
Spread mixture evenly in the prepared casserole dish.
Dot with cheese pieces across the top.
4. Bake
Cover with foil and bake for 30 minutes.
Remove foil, stir gently, and bake 15–20 minutes more, until potatoes are tender and lightly golden.
