Ingredients:

1 medium head of broccoli, cut into florets

8 oz (225g) mushrooms (cremini, white button, or mixed), sliced

2 tbsp olive oil

2 garlic cloves, minced

Salt and black pepper to taste

Juice of 1/2 lemon

1 tbsp chopped fresh parsley or thyme

Optional: pinch of chili flakes or 1 tsp balsamic vinegar

Instructions:

1. Steam or Blanch the Broccoli:

Bring a pot of water to a boil. Blanch broccoli florets for 1–2 minutes, then transfer to ice water or drain and set aside.
(This keeps them bright green and tender-crisp.)

2. Saute the Mushrooms:

In a large skillet, heat 1 tbsp olive oil over medium-high.

Add mushrooms in a single layer and cook without stirring for 3–4 minutes, allowing them to brown.

Stir and continue sauteing another 2–3 minutes until golden and tender.

3. Add Broccoli & Garlic:

Add the remaining 1 tbsp olive oil and the blanched broccoli to the skillet.

Stir in minced garlic, salt, and pepper. Cook for 2–3 minutes until broccoli is heated through and garlic is fragrant.

4. Finish & Serve:

Squeeze lemon juice over the top and sprinkle with fresh herbs.

Optional: drizzle with a little balsamic vinegar or top with shaved Parmesan.

Tips:

Add a handful of baby spinach or cherry tomatoes for color.
