250g (½ lb) cooked shrimp, peeled and chopped
1 tbsp olive oil
1 tsp garlic, minced
½ tsp paprika
½ tsp salt
¼ tsp black pepper
Zest of 1 lime

1 ripe avocado
3 tbsp cream cheese (softened) or Greek yogurt for lighter version
1 tbsp lime juice
1 tbsp fresh cilantro or parsley, chopped
½ tsp salt
Pinch of black pepper
For Garnish
Extra lime zest
Chopped fresh herbs (parsley or cilantro)
Optional: thin slices of cucumber or radish
Instructions
1. Prepare the Shrimp
Heat olive oil in a small pan over medium heat.
Saute garlic for 30 seconds until fragrant.
Add chopped shrimp, paprika, salt, and pepper.
Cook 2–3 minutes until warm and aromatic.
Remove from heat, let cool slightly, and stir in lime zest.
2. Make the Creamy Filling
In a bowl, mash avocado until smooth.
Add cream cheese or Greek yogurt, lime juice, chopped herbs, salt, and pepper.
Mix until creamy and well combined.
3. Assemble the Log
Lay a piece of plastic wrap on a flat surface, large enough to wrap the log.
Spread the creamy avocado mixture evenly into a rectangular strip (~1-inch thick).
Place the cooked shrimp evenly on top.
Carefully roll the log using the plastic wrap, tucking the sides in as you roll to form a tight cylinder.
Twist the ends of the plastic wrap to seal.
4. Chill and Set
Refrigerate for at least 2 hours to firm up the log.
When ready to serve, unwrap and place on a serving platter.
Garnish with lime zest, herbs, and optional thin cucumber or radish slices.
Slice into 1-inch thick rounds and serve.
Tips
For extra flavor, mix a small pinch of smoked paprika or cayenne into the creamy filling.
Can be made a day ahead — flavors deepen overnight.
For a lighter version, replace cream cheese with all Greek yogurt.
Serve with crackers, toast points, or cucumber slices.
