Ingredients
For the Pastry:
1 sheet puff pastry, thawed
1 egg (for egg wash)
1 tbsp milk or water (for egg wash)

1 cup shredded Manchego cheese (or a mix of Manchego, Mahone, and Idiazabal)
½ cup ricotta or cream cheese (for creaminess)
½ tsp smoked paprika (pimento)
½ tsp dried oregano or thyme
1 clove garlic, minced
½ tsp black pepper
½ tsp salt (adjust based on cheese saltiness)
¼ cup finely chopped roasted red peppers (optional)
¼ cup finely chopped chorizo (optional)

Sesame seeds or poppy seeds (optional)
Fresh parsley, chopped (for serving)
Instructions
1. Prepare the Filling
1. In a bowl, mix shredded Manchego cheese, ricotta, smoked paprika, oregano, garlic, black pepper, and salt.
2. Stir in roasted red peppers and/or chorizo (if using).
3. Mix until well combined.
2. Assemble the Pastries
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Roll out the puff pastry on a floured surface and cut into 8-10 squares or circles.
3. Place 1 tbsp of filling in the center of each piece.
4. Fold the pastry over into a triangle or rectangle and press edges with a fork to seal.
5. In a small bowl, whisk together the egg and milk.
6. Brush each pastry with the egg wash and sprinkle with sesame or poppy seeds.

1. Transfer pastries to the prepared baking sheet.
2. Bake for 20-25 minutes, until golden brown and crispy.
