Ingredients 

Spinach–Feta Filling

1 cup frozen spinach (thawed & well squeezed) OR 2 cups fresh spinach sauteed

½ cup feta cheese, crumbled

3 tbsp cream cheese OR Greek yogurt

1 small garlic clove, grated (or ½ tsp garlic powder)

1 tbsp olive oil

1–2 tbsp chopped fresh dill or parsley

Salt & black pepper to taste

Optional: 1–2 tbsp shredded mozzarella

For the Pinwheels

1 sheet puff pastry (thawed and chilled)

1 egg

Instructions

1. Prepare the Filling

If using frozen spinach, squeeze out all the water.

In a bowl, mix: spinach, feta, cream cheese/yogurt, garlic, olive oil, dill/parsley, salt, and pepper.

Mix until creamy and well combined.

2. Prepare the Pastry

Unroll the puff pastry on a clean surface.

Spread the spinach-feta filling evenly across the entire sheet.

Leave about ½ inch empty on one side for sealing.

3. Roll & Slice

Roll the pastry tightly into a long log.

Brush the edge with a little water to seal.

Use a sharp knife to cut into 12–14 slices (about 1 inch thick).

4. Bake

Preheat oven to 200°C (400°F).

Place pinwheels on a parchment-lined tray.

Brush tops lightly with beaten egg for shine.

Bake 18–22 minutes until golden, puffed, and crispy.

Ensure spinach is very dry. Extra moisture makes pinwheels soggy.
