Shrimp Alfredo Pasta

Ingredients:
For the Pasta:
8 oz fettuccine (or any pasta of your choice)
Salt (for boiling the pasta)
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
Salt and pepper, to taste
1/2 tsp red pepper flakes (optional, for a little heat)
For the Alfredo Sauce:
1/2 cup unsalted butter
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 tsp garlic powder (optional)
Salt and pepper, to taste
Fresh parsley (for garnish)
Instructions:
1. Cook the Pasta:
Boil a large pot of salted water.
Add the fettuccine (or pasta of choice) and cook according to the package instructions, usually around 8-10 minutes, until al dente.
Drain and set aside, saving a cup of pasta water for later if needed to thin out the sauce.
2. Cook the Shrimp:
While the pasta cooks, heat the olive oil and butter over medium-high heat in a large skillet.
Once the butter is melted, add the minced garlic and sauté for 1-2 minutes, until fragrant.
Add the shrimp to the pan and season with salt, pepper, and red pepper flakes (if using).
Cook the shrimp for about 2-3 minutes on each side, until pink and opaque.
Remove the shrimp from the skillet and set them aside.
3. Make the Alfredo Sauce:
In the same skillet, melt the butter over medium heat.
Add the heavy cream and bring it to a simmer, stirring occasionally.
Once the cream starts simmering, lower the heat and gradually whisk in the grated Parmesan cheese. Stir until the cheese has fully melted and the sauce is smooth.
Season with garlic powder, salt, and pepper to taste.
If the sauce is too thick, add a little pasta water (about 1/4 cup at a time) to thin it to your desired consistency.
4. Combine:
Add the cooked pasta to the skillet with the Alfredo sauce. Toss to coat the pasta evenly with the sauce.
Add the shrimp back into the skillet and toss everything together.
5. Garnish and Serve:
Garnish with fresh chopped parsley and a little extra grated Parmesan cheese, if desired.
Serve immediately while hot!
