Ingredients
1 lb (450g) large shrimp, peeled and deveined
2 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 can (14 oz / 400g) crushed tomatoes
1 tsp tomato paste
½ tsp chili flakes (optional)
½ tsp dried oregano
Salt and pepper, to taste
½ cup crumbled feta cheese
2 tbsp chopped fresh parsley
1 tbsp chopped fresh dill (optional)
Juice of ½ lemon
Instructions
Step 1: Cook the Tomato Sauce (10 minutes)
1. Heat olive oil in a skillet over medium heat.
2. Sauté onion for 4–5 minutes until soft. Add garlic and cook 1 more minute.
3. Stir in crushed tomatoes, tomato paste, oregano, chili flakes, salt, and pepper.
4. Simmer uncovered for 10 minutes until slightly thickened.
Step 2: Add the Shrimp (5–6 minutes)
1. Add shrimp to the skillet and cook for about 2–3 minutes per side, just until pink and opaque.
2. Gently stir in lemon juice and half the feta.
Step 3: Finish with Feta & Herbs (2–3 minutes)
1. Sprinkle remaining feta on top and cover the skillet for 1–2 minutes so it melts slightly.
2. Garnish with parsley and dill.
To Serve:
Serve hot with crusty bread, pita, or over orzo or rice.
Add a green salad or roasted vegetables on the side.
