Simple Chicken & Spinach Curry with Easy Flatbreads
Ingredients:
For the Chicken & Spinach Curry:
- 1 tbsp Olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 500g chicken breast, diced
400g can chopped tomatoes - 200ml coconut milk
- 100g fresh spinach
- Salt and pepper to taste
- Fresh coriander, chopped (for garnish)
For the Easy Flatbreads:
- 200g plain flour
- ½ tsp salt
- 100ml water
- 1 tbsp vegetable oil
Directions:
- Prepare the Curry: Heat the oil in a large pan over medium heat. Add the onion, garlic, and ginger, cooking until softened. Stir in the curry powder and turmeric, cooking for another 2 minutes. Add the diced chicken, cooking until browned. Pour in the chopped tomatoes and coconut milk, bringing the mixture to a simmer. Cook for 20 minutes, then stir in the spinach until wilted. Season with salt and pepper. Garnish with chopped coriander.
- Make the Flatbreads: In a bowl, mix the flour and salt. Gradually add the water and oil, kneading to form a soft dough. Divide into small balls, then roll each out into a thin round. Heat a non-stick pan over medium-high heat and cook each flatbread for 2-3 minutes on each side until lightly browned.
Serve: Plate the chicken curry with a side of flatbreads. Enjoy hot.
