Skillet Chicken and Mushroom Wine Sauce
A rich and creamy dish with tender chicken, sautéed mushrooms, and a delicious white wine sauce, all made in one skillet. Perfect for a cozy dinner!

Ingredients:
2 large boneless, skinless chicken breasts (or 4 small)
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
¼ cup all-purpose flour (for dredging)
4 tbsp olive oil
8 oz cremini or button mushrooms, sliced
3 cloves garlic, minced
½ cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
½ cup chicken broth
½ cup heavy cream (or half-and-half for a lighter option)
1 tsp Dijon mustard (optional, for extra depth)
1 tsp fresh thyme (or ½ tsp dried)
¼ cup grated Parmesan cheese (optional)
2 tbsp fresh parsley, chopped (for garnish)
Instructions:
Prepare the Chicken:
Slice chicken breasts in half horizontally if they are thick.
Season with salt, pepper, and garlic powder.
Dredge lightly in flour, shaking off excess.
Cook the Chicken:
Heat olive oil and 1 tbsp olive oil in a large skillet over medium-high heat.
Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
Sauté the Mushrooms:
Add remaining olive oil to the skillet.
Cook mushrooms over medium heat for 5 minutes until browned.
Add garlic and cook for another 30 seconds.
Make the Sauce:
Pour in white wine, scraping up browned bits from the skillet.
Let it simmer for 2 minutes until slightly reduced.
Stir in chicken broth, heavy cream, Dijon mustard (if using), and thyme.
Simmer for 3-4 minutes until the sauce thickens slightly.
Combine & Serve:
Return the chicken to the skillet and spoon sauce over it.
Simmer for 2-3 minutes until the chicken is fully cooked (165°F internal temp).
Stir in Parmesan cheese if using.
Garnish with fresh parsley and serve warm.
