Instructions

1. Roast or Char the Eggplants:

Option A – Oven Roasted (easy):

Preheat oven to 450°F (230°C).

Pierce eggplants several times with a fork.

Place on a baking sheet and roast for 35–40 minutes, turning once, until very soft and collapsed.

Option B – Open Flame or Grill (maximum smokiness):

Char eggplants over gas flame or hot grill, turning with tongs until blackened and collapsed, about 10–15 minutes.

Let cool slightly, then peel off and discard blackened skin.

2. Drain & Mash the Flesh:

Cut roasted eggplants open, scoop out the soft flesh, and discard the skin.

Place flesh in a strainer or colander for 10–15 minutes to drain excess moisture.

3. Mix the Dip:

In a bowl, mash eggplant with a fork or whisk until mostly smooth (or use a food processor for a creamier texture).

Stir in tahini, lemon juice, garlic, olive oil, salt, and cumin (if using).

Taste and adjust seasoning (more lemon, salt, or tahini if needed).

4. Serve:

Spoon into a shallow bowl or plate.

Drizzle with olive oil and garnish with parsley, paprika, or zaatar.
