Ingredients

For the Burritos:

3 cups cooked shredded chicken

2 cups cooked rice (white or Mexican-style)

1 can (15 oz) black beans, drained & rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar/monterey jack mix works best)

6 large flour tortillas (10-inch burrito size)

½ cup salsa

1 tbsp olive oil

For the Smother Sauce:

2 tbsp olive oil

2 tbsp flour

2 cups chicken broth

1 cup sour cream

1 can (4 oz) diced green chilies

1 tsp cumin

½ tsp chili powder

½ tsp garlic powder

Salt & black pepper to taste

For Topping:

1 cup shredded cheese

Fresh cilantro, jalapenos, or green onions for garnish

Instructions

Make the sauce:

In a saucepan, melt butter. Stir in flour and cook 1–2 minutes.

Slowly whisk in chicken broth until smooth.

Add sour cream, green chilies, cumin, chili powder, garlic powder, salt & pepper.

Simmer 5 minutes until slightly thickened. Remove from heat.

Assemble burritos:

In a large bowl, combine shredded chicken, rice, beans, corn, salsa, and 1 cup cheese.

Place filling in center of each tortilla, fold sides in, and roll up tightly.

Bake:

Preheat oven to 190°C (375°F).

Lightly grease a baking dish. Place burritos seam-side down.

Pour sauce evenly over burritos and sprinkle with extra cheese.

Bake uncovered for 25–30 minutes, until bubbly and golden.

Serve:

Garnish with cilantro, jalapenos, or green onions.

Serve hot with guacamole, pico de gallo, or extra sour cream.
