Ingredients:

½ cup roasted red peppers, drained

¼ cup almonds (blanched or Marcona)

¼ cup grated Manchego cheese

1 clove garlic, minced

2 tablespoons olive oil

½ teaspoon smoked paprika

½ teaspoon sherry vinegar (or red wine vinegar)

Salt and black pepper to taste

Instructions:

1. Make the Cheese Crisps:

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. In a bowl, mix shredded Manchego cheese with smoked paprika, garlic powder, cayenne (if using), oregano, and chopped chorizo (if using).

3. Place small piles (about 1 tablespoon each) of the cheese mixture on the baking sheet, leaving 2 inches apart for spreading.

4. Bake for 6-8 minutes, until the edges turn golden brown.

5. Let crisps cool on the baking sheet for 5 minutes before transferring to a wire rack.
