Ingredients

For the Buffalo Bites:

1 lb boneless, skinless chicken breast (or tofu, cut into cubes)

½ cup milk

½ cup cornstarch

½ cup panko breadcrumbs

¼ teaspoon black pepper

For the Buffalo Sauce:

Instructions

1. Prepare & Roast the Vegetables:

1. Preheat oven to 425°F (220°C).

2. Toss potatoes and Brussels sprouts with olive oil, garlic powder, paprika, salt, and pepper.

3. Spread evenly on a baking sheet and roast for 25-30 minutes, flipping halfway, until crispy and golden brown.

2. Prepare the Buffalo Bites:

1. In a bowl, soak chicken (or tofu) in buttermilk for 10 minutes.

2. In another bowl, mix cornstarch, panko, garlic powder, paprika, salt, and black pepper.

3. Remove chicken from milk and coat each piece in the dry mixture.

3. Cook the Buffalo Bites:

Frying Method: Heat olive oil in a deep pan to 350°F (175°C) and fry for 3-4 minutes per side until golden and cooked through. Drain on paper towels.

Baking Method: Place coated pieces on a greased baking sheet, spray lightly with oil, and bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
