Spicy Chicken Pasta Bowl with Guacamole, Peppers & Broccoli

Ingredients
For the Chicken
2 chicken breasts, sliced
1 tbsp olive oil
1 tsp paprika
½ tsp chili flakes or chili powder
½ tsp garlic powder
Salt & black pepper
1 tbsp lemon juice
For the Veggies
1 cup broccoli florets
1 cup sliced bell peppers (red/yellow)
1 tbsp olive oil
Salt & pepper
For the Pasta
200g pasta (penne, bow-tie, or fusilli)
½ cup reserved pasta water
2 tbsp cream or Greek yogurt
2 tbsp parmesan
For the Guacamole
1 ripe avocado
1 tbsp lemon juice
Salt & pepper
1 tbsp chopped coriander
Instructions
1. Cook the Pasta
Boil pasta in salted water according to package instructions.
Reserve ½ cup pasta water, then drain and set aside.
2. Cook the Chicken
Season sliced chicken with paprika, chili flakes, garlic powder, salt, pepper, and lemon juice.
Heat olive oil in a pan over medium-high heat.
Cook chicken for 5–6 minutes, until golden and fully cooked.
Remove and set aside.
3. Cook the Veggies
In the same pan, add olive oil.
Saute peppers for 2–3 minutes until slightly soft.
Add broccoli and season with salt and pepper.
Cook another 3–4 minutes until tender-crisp.
4. Combine with Pasta
Add the cooked pasta into the pan with veggies.
Pour a little pasta water and stir.
Optional: mix in cream or Greek yogurt for a light creamy base.
Add parmesan if using.
Toss everything together.
5. Make the Guacamole
Mash avocado with lemon juice, salt, pepper, and coriander.
6. Assemble the Bowl
Add pasta + veggies as the base.
Top with spicy chicken.
Add a generous scoop of fresh guacamole on the side.
Garnish with lemon slices and coriander if desired.
Tips
Make it extra spicy by adding sriracha or hot chili flakes.
For a healthier version, use whole wheat pasta or chickpea/lentil pasta.
Add sweet corn or cherry tomatoes for more color.
