Chicken & Marinade
4 chicken thighs or breasts, diced
1 tablespoon olive oil
1 teaspoon smoked paprika
½ teaspoon cumin
½ teaspoon chili flakes (optional for kids: reduce to ¼ tsp or skip)

Street Corn
2 cups corn kernels (fresh or frozen)
1 tablespoon butter or olive oil
1 teaspoon smoked paprika
1 tablespoon lime juice
Salt, to taste
Rice
1 cup long-grain rice (basmati or jasmine)
2 cups chicken or vegetable broth
1 small onion, chopped
2 garlic cloves, minced
1 teaspoon olive oil
Salt, to taste
Garnish
Fresh cilantro or parsley, chopped

👩🍳 Instructions
1️⃣ Marinate & Cook Chicken
Toss chicken with olive oil, smoked paprika, cumin, chili flakes, salt, and pepper.
Heat a pan over medium heat and cook chicken 6–8 minutes until golden and cooked through. Set aside.
2️⃣ Cook Rice
Heat olive oil in a saucepan. Sauté onion and garlic 3–4 minutes until soft.
Add rice and stir to coat in oil.
Pour in broth, bring to a boil, reduce heat, cover, and simmer 15 minutes until rice is tender.
3️⃣ Prepare Street Corn
Heat butter or olive oil in a pan.
Add corn, smoked paprika, lime juice, and salt. Cook 5–7 minutes until lightly charred and fragrant.
4️⃣ Assemble
Fluff rice and mix in cooked chicken.
Top with street corn and garnish with fresh cilantro or parsley.
Serve with lime wedges.
