Ingredients:
Thai Peanut-Glazed Chicken:

Coconut Rice:
  1. 1 cup jasmine or basmati rice
  2. 1 cup coconut milk

  4. 1/2 tsp salt
Mango-Avocado Salsa:
  1. 1 cup diced mango
  2. 1 avocado, diced
  3. 1/4 cup diced red onion
  4. 1 tbsp lime juice
  5. Fresh cilantro, chopped (optional)
  6. Salt & pepper to taste
  7. Chili Peanut Sauce:
  8. 2 tbsp peanut butter
  9. 1 tbsp soy sauce
  10. 1 tsp chili paste or Sriracha (adjust for spice) ️

  12. 1-2 tbsp water to thin (if needed)
Instructions:
Prepare the Thai Peanut-Glazed Chicken: In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, and chili paste. Toss the chicken pieces in the sauce until well-coated. Marinate for at least 15 minutes.
Cook the Coconut Rice: Rinse the rice, then combine it with coconut milk, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes, or until the rice is tender. Fluff with a fork.
