Ingredients:

  1.  1 package of puff pastry (2 sheets), thawed
  2. 2 cups fresh spinach, chopped
  3.  1 cup ricotta cheese
  4. 1/2 cup feta cheese, crumbled
  5. 1/4 cup grated Parmesan cheese
  6.  1 egg, beaten (for egg wash)
  7.  2 cloves garlic, minced
  8.  1 tablespoon olive oil
  9.  Salt and pepper to taste
  10.  1/4 teaspoon nutmeg for added flavor (optional)

Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a skillet, heat olive oil over medium heat.
3. Add minced garlic and sauté for about 1 minute until fragrant.
4. Add the chopped spinach and cook until wilted, about 3-4 minutes.
5. Remove from heat and let it cool slightly.
6. In a mixing bowl, combine the cooked spinach, ricotta cheese, feta cheese, Parmesan cheese, salt, pepper, and nutmeg (if using).
7. Mix well until fully combined.
8. Roll out the thawed puff pastry sheets on a lightly floured surface.
9. Cut each sheet into squares (about 4×4 inches).
10. Place a spoonful of the spinach filling in the center of each pastry square. Be careful not to overfill.
11. Fold the corners of the pastry over the filling to create a triangle or a pocket shape, and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
12. Place the stuffed pastries on a baking sheet lined with parchment paper.
13. Brush the tops with the beaten egg to give them a nice golden color when baked.
14. Bake in the preheated oven for about 15-20 minutes, or until the pastries are puffed and golden brown.
15. Let them cool slightly before serving.

Enjoy your spinach stuffed pastries!

Tips and Variations:

1. Use fresh spinach: Fresh spinach has a milder flavor and better texture than frozen spinach. Simply chop it up and add it to the filling mixture.
2. Don’t overfill the pastry: Leave a little room around the edges of the pastry to allow for even cooking and to prevent the filling from spilling out.
3. Add some heat: Spice up the filling mixture with some diced jalapeños or red pepper flakes for an extra kick.
4. Make it a meal prep solution: Prepare the filling mixture and pastry ahead of time and refrigerate or freeze for later use.
