2 cups corn kernels (fresh or frozen, thawed)
1 tbsp olive oil
½ tsp chili powder (optional)

For the Bowl Base
2 cups cooked rice (white, brown, or cilantro-lime rice)
1 large avocado, sliced
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
For the Cilantro Cream Sauce
½ cup sour cream or Greek yogurt
¼ cup fresh cilantro leaves
1 tbsp lime juice
1 small garlic clove
Salt, to taste
1–2 tbsp water (to thin)
Instructions
Prepare the Cilantro Cream Sauce
Add sour cream (or yogurt), cilantro, lime juice, garlic, salt, and water to a blender. Blend until smooth and creamy. Refrigerate to let flavors meld.
Roast the Corn
Preheat oven to 220°C (425°F).
Toss corn with olive oil, chili powder, and salt.
Spread on a baking tray and roast for 15–18 minutes, stirring once, until lightly charred.
(You can also pan-roast it in a hot skillet.)
Cook the Steak
Pat steak dry and rub with olive oil, garlic powder, paprika, cumin, salt, and pepper.
