Mediterranean Stuffed Salmon

Juicy salmon fillets are filled with a savory stuffing of spinach, feta, garlic, and herbs, then baked until tender and flaky. It’s high in protein, omega-3s, and flavor — a heart-healthy dish that feels indulgent but is easy to make.

Ingredients

For the salmon:

2 large salmon fillets (6–8 oz each), skin-on or skinless

1 tbsp olive oil

Salt & pepper to taste

Lemon wedges (for serving)

For the stuffing:

1 cup fresh spinach (roughly chopped)

1/4 cup feta cheese (crumbled)

2 tbsp cream cheese (or Greek yogurt for lighter option)

2 tbsp sun-dried tomatoes, chopped (oil-packed, drained)

1 garlic clove, minced

1 tbsp chopped fresh dill or parsley

Zest of 1/2 lemon

Salt & pepper to taste

Instructions:

1. Preheat oven:

Preheat to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

2. Make the stuffing:

In a bowl, combine spinach, feta, cream cheese, sun-dried tomatoes, garlic, lemon zest, herbs, salt, and pepper. Mix well until creamy and cohesive.

3. Prepare the salmon:

Using a sharp knife, make a deep slit horizontally in the side of each fillet (creating a pocket, but don’t cut all the way through).

Season both sides with salt and pepper.

 4. Stuff the salmon:

Spoon the filling into each fillet’s pocket. Press gently to secure. You can use toothpicks if needed to keep them closed.

 5. Bake:

Place salmon on prepared sheet. Drizzle lightly with olive oil.

Bake for 18–22 minutes, depending on thickness, until salmon is flaky and cooked through (internal temp should be 135–145°F / 57–63°C).

6. Serve:

 Garnish with lemon wedges and fresh herbs. Serve with roasted veggies, quinoa, or a simple salad.

Tips & Variations:

Add crunch: Mix chopped walnuts or pine nuts into the stuffing.

Spicy kick: Add a pinch of red pepper flakes or harissa paste.

No sun-dried tomatoes: Use chopped olives or roasted red peppers instead.

Air fryer option: Cook at 375°F for 12–15 minutes.
