Stuffed Salmon with Spinach and Feta

 Ingredients

For the Salmon:

2 salmon fillets (6–7 oz each, skin-on or skinless)

1 tbsp olive oil

1 tsp lemon juice

½ tsp garlic powder

½ tsp dried oregano

Salt and pepper, to taste

For the Spinach-Feta Filling:

1 tsp olive oil

1 garlic clove, minced

1 ½ cups fresh spinach, chopped

¼ cup feta cheese, crumbled

2 tbsp cream cheese or Greek yogurt

1 tbsp chopped fresh dill or parsley

Salt and black pepper, to taste

Optional Garnish:

Fresh lemon wedges

A sprinkle of fresh herbs

Drizzle of olive oil or yogurt sauce

 Instructions

1. Prepare the Filling

Heat 1 tsp olive oil in a skillet over medium heat.

Add minced garlic and sauté for 30 seconds until fragrant.

Add chopped spinach and cook until wilted (about 1–2 minutes).

Remove from heat and mix in feta, cream cheese (or yogurt), herbs, salt, and pepper.

Stir well to make a creamy, thick mixture. Set aside to cool slightly.

2. Prepare the Salmon

Preheat oven to 400°F (200°C).

Pat salmon dry with paper towels.

Using a sharp knife, make a deep slit lengthwise in the center of each fillet (be careful not to cut through).

Brush fillets with olive oil, lemon juice, and sprinkle with garlic powder, oregano, salt, and pepper.

3. Stuff the Salmon

Spoon the spinach-feta mixture into each slit, pressing gently.

Place fillets on a lined baking sheet or in a lightly oiled baking dish.

4. Bake

Bake for 18–22 minutes, depending on thickness, until salmon is cooked through and flakes easily with a fork.

Optional: broil for 1–2 minutes for a golden top.

5. Serve

Serve warm with a drizzle of olive oil or squeeze of lemon juice.

Garnish with fresh herbs or a dollop of Greek yogurt sauce.

 Tips & Notes

You can prepare the filling ahead of time and refrigerate for up to 24 hours.

Substitute feta with goat cheese or ricotta for a milder taste.

For extra flavor, sprinkle a few sun-dried tomato bits inside the filling.

Avoid overbaking — salmon is perfect when slightly pink and juicy inside.
