  • 1/2 cup olive oil
  • 3 large potatoes cut into large ‘french fries’
  • 4 medium eggplant cut into large french fry size strips
  • 3 large Sheppard peppers or other sweet peppers cut into
  • large chunks or strips
  • 3 ripe roma tomatoes, fresh or frozen, chopped
  • 1 handful fresh basil leaves
  • 2 cloves chopped garlic
  • salt to taste

Instructions For tasty dish Pepero

  1. In a big pan, fry the potatoes until they are cooked through and browned not crunchy like fries.
  2. Using a slotted spoon, remove from pan so that any leftover oil remains in the pan.
  3. When sautéing eggplant, allow it to brown before gently turning it over.
  4. After the eggplant have browned and/or cooked through roughly 6 to 8 minutes remove them.
  5. Put potatoes aside and add peppers to the leftover oil. If needed, add a little amount of olive oil.
  6. Peppers should be fried until they blister, then taken out of the pan.
  7. After 30 seconds of adding garlic to heated oil, add tomatoes.
  8. After the tomatoes have softened, add the basil and cook for one minute.
  9. Reintroduce the peppers, eggplant, and potatoes, and stir-fry for five minutes.
  10. Perfect when served hot with fresh bread, but as delicious cold the following day.
