Ingredients

For the Chicken

1 lb (450 g) boneless, skinless chicken breast or thighs

3 tbsp olive oil

2 tbsp lemon juice

2 garlic cloves, minced

1 tsp dried oregano

½ tsp paprika

Salt & black pepper, to taste

For the Bowls

2 cups cooked basmati rice, quinoa, or couscous

1 cup cucumber, diced

1 cup cherry tomatoes, halved

½ cup red onion, thinly sliced

½ cup kalamata olives, halved

½ cup crumbled feta cheese

Fresh parsley or dill, chopped

For the Tzatziki

1 cup Greek yogurt

½ cucumber, grated & excess water squeezed out

1 tbsp olive oil

1 tbsp lemon juice

1 garlic clove, finely grated

1 tbsp fresh dill (or mint), chopped

Salt & pepper, to taste

Instructions

Marinate the Chicken:

In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

Coat chicken well and marinate for 30 minutes (or up to overnight in the fridge).

Cook the Chicken:

Heat a grill pan or skillet over medium-high heat.

Cook chicken 5–6 minutes per side until golden and fully cooked.

Slice into strips.

Make the Tzatziki:

In a bowl, mix Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper.

Chill until serving for best flavor.

Assemble the Bowls:

Place rice, quinoa, or couscous at the base of each bowl.

Add sliced chicken, cucumber, tomatoes, onion, olives, and feta.

Drizzle generously with tzatziki and sprinkle parsley or dill on top.
