Juicy shrimp and caramelized pineapple grilled on skewers and brushed with a glossy sweet chilli–lime glaze. Sweet, tangy, lightly spicy, and incredibly summery—great for BBQs or oven grilling.

Ingredients

Skewers

500 g large shrimp, peeled & deveined

2 cups fresh pineapple chunks

Wooden or metal skewers

Sweet & Spicy Marinade / Glaze

3 tbsp sweet chilli sauce

2 tbsp honey or maple syrup

1½ tbsp soy sauce

1 tbsp lime juice

1 tbsp olive oil

1 clove garlic, finely grated

Optional spice:

¼ tsp red chilli flakes

Garnish

cilantro or parsley

Lime wedges

Instructions

1. Make the Marinade

Whisk sweet chilli sauce, honey, soy sauce, lime juice, olive oil, garlic, and chilli flakes (if using).

2. Marinate Shrimp

Toss shrimp in half of the marinade.

Rest 15 minutes (do not over-marinate).

3. Assemble Skewers

Thread shrimp and pineapple alternately onto skewers.

4. Grill or Roast

Grill:

Medium-high heat, 2–3 minutes per side, brushing with remaining glaze.

Oven:

Roast at 220°C (425°F) for 8–10 minutes, broil last 1–2 minutes for caramelization.

5. Finish

Garnish with herbs and a squeeze of lime.

Pineapple caramelizes fast—watch closely.

Shrimp cooks quickly; remove as soon as opaque.

Always reserve some marinade separately for glazing.

Serve over coconut rice or jasmine rice.

Add bell peppers or red onion to skewers.
