Sweet Chilli Glaze (Mild)

3 tbsp sweet chilli sauce (mild)

1 tbsp soy sauce or tamari

1 tbsp honey

1 tsp rice vinegar or lemon juice

1 tsp cornstarch + 2 tbsp water (optional, for thicker glaze)

Cucumber Crunch

1 large cucumber, thinly sliced

1 tsp rice vinegar or lemon juice

Pinch of salt

1 tsp sesame seeds

Base (Choose One)

Steamed jasmine or brown rice

Quinoa or cauliflower rice

Garnish (Optional)

Spring onions, sliced

Fresh cilantro

Instructions

1. Make the Cucumber Crunch

Toss cucumber with vinegar, salt, and sesame seeds.

Set aside to lightly pickle and stay crisp.

2. Cook Chicken & Mushrooms

Heat olive oil in a large pan over medium heat.

Season chicken lightly with salt and pepper.

Sear chicken 4–5 minutes until lightly golden.

3. Glaze

Whisk sweet chilli sauce, soy sauce, honey, and vinegar.

Pour into pan; simmer 2–3 minutes.
