Sweet Potato Tacos with Brie, Cranberry Salsa & Candied Pecans

Ingredients
Roasted Sweet Potatoes
2 medium sweet potatoes, peeled & cubed
2 tbsp olive oil
1 tsp smoked paprika
½ tsp ground cumin
½ tsp garlic powder
Salt & black pepper, to taste
Cranberry Salsa
1 cup fresh cranberries (or thawed frozen)
½ small red onion, finely diced
1 small jalapeno, minced
Juice & zest of 1 orange
1 tbsp honey or maple syrup
2 tbsp fresh cilantro, chopped
Pinch of salt
Candied Pecans
½ cup pecans
2 tbsp maple syrup or honey
½ tsp cinnamon
Pinch of sea salt
Taco Assembly
8 small tortillas (corn or flour)
100g (3–4 oz) brie cheese, sliced
Fresh arugula or spinach, for layering
Instructions
Roast Sweet Potatoes
Preheat oven to 425°F (220°C).
Toss sweet potatoes with olive oil, paprika, cumin, garlic powder, salt, and pepper.
Roast 20–25 minutes, flipping halfway, until tender and caramelized.
Make Cranberry Salsa
In a food processor, pulse cranberries until coarsely chopped (not pureed).
Stir in onion, jalapeno, orange juice/zest, honey, cilantro, and salt.
Chill in fridge until ready to use.
Candy the Pecans
In a skillet, toast pecans over medium heat.
Add maple syrup, cinnamon, and salt. Stir until pecans are coated and caramelized (3–4 minutes).
Spread on parchment to cool.
Warm Tortillas
Heat tortillas in a dry skillet or directly over flame until lightly charred.
Assemble Tacos
Layer arugula, roasted sweet potatoes, slices of brie, a spoonful of cranberry salsa, and candied pecans.
Serve immediately while brie is slightly melty.
Tips
For extra protein: add roasted chickpeas or shredded rotisserie chicken.
Swap brie with goat cheese or feta for a sharper tang.
These also work as holiday appetizers if you use mini tortillas or lettuce cups.
