Ingredients

2 medium sweet potatoes, peeled and cubed

2 tbsp olive oil

Salt & black pepper, to taste

1 tsp dried oregano or fresh thyme

1 ball burrata cheese

1–2 tbsp fresh parsley or basil, chopped

Juice of ½ lemon

Optional: balsamic glaze for drizzling

Instructions

Roast the sweet potatoes

Preheat oven to 200°C (400°F).

Toss sweet potato cubes with olive oil, salt, pepper, and oregano/thyme.

Spread on a baking tray in a single layer.

Roast for 25–30 minutes, flipping halfway, until tender and lightly caramelized.

Assemble the dish

Place roasted sweet potatoes on a serving plate.

Tear the burrata over the warm sweet potatoes.

Drizzle with olive oil and lemon juice.

Sprinkle with fresh herbs.
