A warm, hearty, fall-inspired bowl with juicy maple chicken, roasted sweet potatoes, shredded kale, crisp apples, goat cheese, almonds, and a delicious creamy balsamic vinaigrette.

 Ingredients

For the Maple Chicken

2 chicken breasts

1 tbsp olive oil

1 tbsp maple syrup (or honey)

½ tbsp Dijon mustard

½ tsp garlic powder

Salt & pepper

For the Roasted Sweet Potatoes

1 medium sweet potato, cubed

1 tbsp olive oil

Salt & pepper

For the Bowl

2 cups chopped kale

1 cup cooked warm wild rice or brown rice

½ apple, thinly sliced

¼ cup almonds

¼ cup goat cheese (crumbled)

Optional: red onion slices

Creamy Balsamic Dressing

2 tbsp balsamic vinegar

1 tbsp olive oil

1 tbsp Greek yogurt

½ tsp maple syrup

½ tsp Dijon mustard

Salt & pepper

 Instructions

1. Roast Sweet Potatoes

Toss cubes with olive oil, salt, pepper.

Roast at 220°C (425°F) for 20–25 minutes, until soft and caramelized.

2. Cook Maple Chicken

Mix olive oil, maple syrup, Dijon, garlic powder, salt, pepper.

Coat chicken and sear in a pan 4–5 minutes per side until golden and cooked.

Slice into strips.

3. Make Creamy Balsamic Dressing

Whisk balsamic vinegar, olive oil, Greek yogurt/mayo, maple syrup, Dijon, salt, and pepper.

4. Prepare Kale

Massage kale with 1 tsp olive oil + pinch of salt for 20–30 seconds to soften.

Maple chicken slices

Apple slices

Goat cheese
