Tater Tot Breakfast Casserole Recipe

(A hearty, crowd-pleasing breakfast casserole loaded with tater tots, eggs, cheese, and your favorite breakfast meats or veggies.)

Ingredients

  1.  1 bag (32 oz) frozen tater tots
  2. 8 large eggs
  3.  1 cup milk (whole or 2%)
  4. 2 cups shredded cheddar cheese
  5.  1/2 lb cooked and crumbled beef or sausage
  6.  1/2 cup diced onions
  7.  1/2 cup diced bell peppers
  8.  1 tsp garlic powder
  9.  1/2 tsp salt
  10.  1/4 tsp black pepper

Instructions 

1. Preheat the oven:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. Layer the tater tots:
Spread the frozen tater tots evenly in the bottom of the prepared baking dish.

3. Prepare the egg mixture:
In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper.

4. Assemble the casserole:
Sprinkle the cooked beef or sausage evenly over the tater tots.
Add the diced onions and bell peppers for extra flavor and texture.
Pour the egg mixture over the tater tots and toppings.
Sprinkle the shredded cheddar cheese evenly on top.

5. Bake the casserole:
Cover the dish with foil and bake for 35 minutes.
Remove the foil and bake for an additional 10–15 minutes, or until the eggs are set, the cheese is melted, and the top is golden.

6. Serve and enjoy:
Let the casserole cool for 5 minutes before slicing. Serve warm and enjoy with hot sauce, ketchup, or a side of fresh fruit.
