👩🍳 Instructions
1️⃣ Roast the Chickpeas
Preheat oven to 200°C / 400°F.
Toss chickpeas with olive oil, cumin, paprika, salt & pepper.
Roast 20 minutes, shaking halfway, until crispy.
2️⃣ Make the Tomato-Cucumber Salad
Mix tomatoes, cucumber, onion, olive oil, lemon juice & salt.
Set aside.
