Ingredients
3–4 ripe heirloom or cherry tomatoes, sliced or halved
2 balls fresh burrata cheese
3 tbsp basil pesto (homemade or store-bought)
2 tbsp extra virgin olive oil
Juice & zest of ½ lemon
Fresh basil leaves, for garnish
Salt & black pepper, to taste
Optional: toasted pine nuts for crunch
Instructions
Prepare Tomatoes
Slice large tomatoes into thick rounds or halve cherry tomatoes.
Arrange them on a serving platter.
Add Burrata
Place burrata balls in the center (or tear them open for a creamier look).
Dress
Drizzle basil pesto over the burrata and tomatoes.
Squeeze fresh lemon juice and sprinkle zest on top.
Finish with olive oil, salt, and black pepper.
Garnish
Scatter basil leaves and optional pine nuts.
