¼ cup Kalamata olives, pitted

¼ cup crumbled feta cheese

2 tbsp fresh parsley or dill, chopped

For the Greek Dressing:

3 tbsp extra virgin olive oil

2 tbsp red wine vinegar

1 tbsp fresh lemon juice

1 garlic clove, minced

1 tsp dried oregano

½ tsp Dijon mustard

Salt & black pepper, to taste

Instructions

Marinate Chicken:

In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

Coat chicken and let marinate for at least 30 minutes (up to 4 hours for best flavor).
