Vegan Lentil Patties Recipe

2 cups water

2 tbsp ground flaxseeds + 5 tbsp water (flax egg)
1 tsp smoked paprika
1 tsp cumin
½ tsp salt
¼ tsp black pepper
2 tbsp fresh parsley, chopped
1 tbsp olive oil (optional for frying)
Oil spray (for air frying or baking)
Instructions:
Cook the Lentils:
Rinse lentils and cook in 2 cups of water until soft (about 15 minutes). Drain and mash slightly.
Prepare Flax Egg:
Mix ground flaxseeds with water and let it sit for 5 minutes.
Mix Ingredients:
In a bowl, combine mashed lentils, onion, garlic, carrot, breadcrumbs, spices, parsley, and flax egg. Mix well.
Form Patties:
Shape the mixture into small patties.
Cook the Patties:
Air Fryer: Spray patties with oil and air fry at 375°F (190°C) for 10-12 minutes, flipping halfway.
