1 tbsp olive oil

1 zucchini, diced
½ red bell pepper, diced
½ small red onion, sliced
1 tbsp olive oil
½ tsp dried oregano
½ tsp ground cumin
Salt & pepper, to taste
Creamy Lemon Yogurt Sauce
½ cup Greek yogurt
1 tbsp tahini
1 tbsp lemon juice
1 small garlic clove, grated
Salt, to taste
Water to thin, as needed

Instructions
1. Roast Sweet Potatoes
Preheat oven to 200°C / 400°F.
Pierce sweet potatoes, rub with olive oil, salt, and pepper.
Roast 30–35 minutes until soft and caramelized.
2. Roast Chickpeas & Veggies
Toss chickpeas, zucchini, bell pepper, and onion with olive oil, oregano, cumin (if using), salt, and pepper.
Roast on a tray 20–25 minutes, stirring once, until golden.
3. Make the Sauce
Whisk yogurt, tahini, lemon juice, garlic, and salt.
Thin with water until drizzle-able.
4. Assemble
Split sweet potatoes open.
Spoon chickpea veggie mix on top.
Drizzle with lemon yogurt sauce.
Finish with feta, herbs, or olives.
