Warm Spinach and Feta Stuffed Pitas

These warm pitas are stuffed with a creamy spinach-feta filling that’s lightly seasoned with herbs and garlic. The flavors are reminiscent of Greek spanakopita — but easier, faster, and perfect for a light lunch or cozy dinner. Crispy outside, cheesy inside, and beautifully Mediterranean.

Ingredients

For the Filling

2 cups fresh spinach, chopped (or 1 cup frozen, thawed and squeezed dry)

½ cup crumbled feta cheese

¼ cup ricotta or Greek yogurt

1 small onion, finely chopped

1 garlic clove, minced

1 tbsp olive oil

½ tsp dried oregano or dill

¼ tsp black pepper

Pinch of salt

For the Pitas

2–3 whole wheat or white pita breads

1 tbsp olive oil

Optional Add-ins

2 tbsp chopped sun-dried tomatoes or olives

1 tbsp chopped parsley or mint

Instructions

1. Make the Filling

Heat olive oil in a pan over medium heat.

Add onion and sauté for 3–4 minutes until soft.

Stir in garlic and spinach. Cook until wilted (about 2–3 minutes).

Remove from heat and let cool slightly.

Stir in feta, ricotta (or yogurt), herbs, and pepper. Mix until creamy.

2. Stuff the Pitas

Cut pitas in half to form pockets.

Carefully stuff each half with 2–3 tbsp of the spinach-feta mixture.

Brush the outside lightly with olive oil.

3. Warm the Pitas

Option 1 – Skillet:

Heat a skillet over medium heat.

Toast each pita for 1–2 minutes per side until golden and warm.

Option 2 – Oven:

Preheat oven to 180°C (350°F).

Bake stuffed pitas on a tray for 5–7 minutes until heated through and slightly crisp.

4. Serve

Serve warm with:

Tzatziki or garlic yogurt sauce

Tomato-cucumber salad on the side

A drizzle of olive oil or lemon juice on top

Notes & Tips

Use frozen spinach to save time — just make sure it’s well-drained.

Add a few chili flakes for a subtle kick.

For extra crispiness, air fry the stuffed pitas at 180°C (350°F) for 5–6 minutes.

Makes a great packed lunch or light dinner when served with soup or salad.
