Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil.
Cook pasta until al dente according to package instructions.
Reserve ½ cup pasta water, then drain.
2. Whip the Ricotta
In a food processor or blender, combine ricotta, olive oil, lemon zest, lemon juice, garlic (if using), salt, and pepper.
Blend for 1–2 minutes until smooth, airy, and creamy.
3. Prepare the Tomatoes
Toss cherry tomatoes with olive oil, salt, and pepper.

4. Assemble
Return warm pasta to the pot.
Add whipped ricotta and a splash of reserved pasta water.
Toss gently until glossy and coated.
Fold in tomatoes and most of the basil.
