Ingredients:

– 1 cup wild rice
– 4 cups vegetable or chicken broth

– 1 onion, chopped
– 3 cloves garlic, minced
– 8 oz mixed mushrooms (shiitake, cremini, oyster)
– 1 teaspoon dried thyme
– 1/2 teaspoon dried rosemary
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 cup heavy cream or half-and-half (optional)

Instructions:

1.Rinse the wild rice and cook it as directed on the packet. After draining, put away.
2. In a big saucepan, heat the olive oil. Add the garlic and onion and sauté until they are tender.
3. Cook the mushrooms until they are soft.
4. Season with salt, pepper, rosemary, thyme, and broth. Bring to a boil.
5. Simmer for 20 minutes on low heat.
6. Add cooked wild rice and stir.
7. For richness, you may add half-and-half or heavy cream if you’d like.
8. Garnish with freshly chopped herbs and serve hot.
