Ingredients

500 g ground turkey

1 small onion, very finely chopped

2 garlic cloves, minced

½ cup breadcrumbs

1 egg

Creamy Spinach Sauce

1 tbsp olive oil

2 garlic cloves, minced

1½ cups milk or light cream

½ cup Greek yogurt

½ cup grated Parmesan

2 cups fresh spinach

Salt & black pepper, to taste

Optional: pinch of nutmeg or lemon zest

Instructions

1. Make the Meatballs

In a bowl, mix turkey, onion, garlic, breadcrumbs, egg, Parmesan, olive oil, oregano, salt, and pepper.

Mix gently (don’t overwork).

Roll into medium meatballs (about 16–18).

2. Cook the Meatballs

Heat a large skillet over medium heat with a drizzle of olive oil.

Brown meatballs on all sides, 8–10 minutes (they don’t need to be fully cooked yet).

Remove and set aside.

3. Prepare the Creamy Spinach Sauce

In the same pan, add olive oil and butter.

Saute garlic 30 seconds until fragrant.

Pour in milk/cream and bring to a gentle simmer.

Stir in Greek yogurt and Parmesan until smooth.

4. Simmer

Add spinach and let it wilt.

Return meatballs to the pan.

Simmer gently 8–10 minutes until meatballs are cooked through and sauce thickens.

Season to taste; add nutmeg or lemon zest if using.

5. Serve

Spoon sauce generously over meatballs.

Finish with extra Parmesan and cracked black pepper.
