2 chicken breasts, sliced

1 tbsp olive oil

1½ cups mushrooms (button or shiitake), sliced

2 cloves garlic, minced

⅓ cup sweet chilli sauce

1 tbsp soy sauce or tamari

1 tsp rice vinegar or lemon juice

½ tsp black pepper

Bowl Base

1 cup cooked jasmine rice, brown rice, or quinoa

Cucumber Crunch

1 large cucumber, thinly sliced

1 tsp sesame oil

1 tsp rice vinegar or lemon juice

Pinch of salt

Optional: 1 tsp sesame seeds or chili flakes

Optional Toppings

Sliced green onions

Fresh cilantro or parsley

Instructions

Step 1: Prepare Cucumber Crunch

In a bowl, toss cucumber with sesame oil, vinegar/lemon juice, salt, and sesame seeds if using.

Set aside to lightly pickle while cooking the chicken.

Step 2: Cook Chicken

Heat olive oil in a skillet over medium-high heat.

Add chicken and cook 4–5 minutes until lightly golden.

Remove chicken and set aside.

Step 3: Cook Mushrooms

In the same pan, add mushrooms and saute 4–5 minutes until browned and moisture evaporates.

Add garlic and cook 30 seconds.

Step 4: Sauce It Up

Return chicken to the pan.

Add sweet chilli sauce, soy sauce, and vinegar.

Simmer 2–3 minutes until chicken is cooked through and sauce coats everything.

Step 5: Assemble Bowls

Add rice or quinoa to bowls.

Top with sweet chilli chicken & mushrooms.

Finish with cucumber crunch and fresh herbs.

Tips

Don’t overcrowd the pan—this helps mushrooms brown instead of steam.

For extra heat, add chili oil or fresh red chilies.

Swap chicken for tofu or shrimp if desired.

Use low-sugar sweet chilli sauce for a lighter version.
