Ingredients

2 chicken breasts, sliced
1 tbsp olive oil
1½ cups mushrooms (button or shiitake), sliced
2 cloves garlic, minced
⅓ cup sweet chilli sauce
1 tbsp soy sauce or tamari
1 tsp rice vinegar or lemon juice
½ tsp black pepper
Bowl Base
1 cup cooked jasmine rice, brown rice, or quinoa
Cucumber Crunch
1 large cucumber, thinly sliced
1 tsp sesame oil
1 tsp rice vinegar or lemon juice
Pinch of salt
Optional: 1 tsp sesame seeds or chili flakes

Instructions
Step 1: Prepare Cucumber Crunch
In a bowl, toss cucumber with sesame oil, vinegar/lemon juice, salt, and sesame seeds if using.
Set aside to lightly pickle while cooking the chicken.
Step 2: Cook Chicken
Heat olive oil in a skillet over medium-high heat.
Add chicken and cook 4–5 minutes until lightly golden.
Remove chicken and set aside.
Step 3: Cook Mushrooms

Add garlic and cook 30 seconds.
Step 4: Sauce It Up

Simmer 2–3 minutes until chicken is cooked through and sauce coats everything.
