Ingredients:
3/4 cup (150g) sugar (or coconut sugar for a natural alternative)
1/2 cup (120g) full-fat cottage cheese, blended until smooth
1 large egg
Zest of 1 large lemon
2 tbsp fresh lemon juice
1 1/2 cups (180g) all-purpose flour (or 1:1 gluten-free flour)
1/2 tsp baking soda
1/4 tsp salt
1 tbsp poppy seeds
* Optional: 1/2 tsp vanilla extract
Instructions:
1. Preheat Oven:
Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper.
2. Cream & Sugar:
In a large bowl, cream together with sugar and blend until light and fluffy.
3. Add Wet Ingredients:
Mix in the blended cottage cheese, egg, lemon zest, lemon juice, and vanilla (if using) until smooth.
4. Add Dry Ingredients:
In a separate bowl, whisk flour, baking soda, salt, and poppy seeds. Gradually mix the dry ingredients into the wet until a soft dough forms.
5. Scoop & Bake:
Drop tablespoons of dough onto the baking sheet, spacing 2 inches apart. Bake for 12–14 minutes, until edges are lightly golden.
6. Cool:
Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
