Zucchini and Potato Bake with Cheesy Topping
This hearty dish combines layers of tender zucchini and sliced potatoes baked to perfection with a golden, cheesy topping. Fresh zucchini and thinly sliced potatoes are seasoned with a blend of herbs and spices, then layered in a baking dish.The bake is then cooked until the cheese is melted, bubbly, and slightly golden, creating a creamy, rich crust. This dish is ideal as a comforting main or a flavorful side for family meals.
Ingredients:
For the Vegetable Base:
2 zucchini
Salt
2 large potatoes
Water
1 onion
Olive oil
1 carrot
2 peppers (any color)
Corn (200g or 1 cup)
Chives
Parsley
2 eggs
Salt
Black pepper
Flour (200g or 1 cup)

For the Cheesy Topping:
100g cheese (about 1/2 cup)
2 tablespoons mayonnaise
3 tablespoons Greek yogurt
Garlic (to taste)
Dill (to taste)
Instructions:
1. Begin by slicing the 2 zucchinis and sprinkling them with salt. Allow them to rest for 15 minutes to release excess moisture.
2. Meanwhile, peel and grate the 2 large potatoes. Place them in water for 10 minutes and then drain to remove excess starch.
3. In a pan, heat some olive oil and sauté 1 finely chopped onion until translucent.
4. Add the drained grated potatoes and cook for about 5 minutes.
5. Add 1 finely chopped carrot to the pan, mix well, cover with a lid, and cook for an additional 3-5 minutes.
6. Now, finely chop and add 2 peppers to the pan. Cover again and cook for another 3-5 minutes.
7. After 15 minutes, squeeze out the excess water from the zucchini and add them to the pan with the other vegetables. Stir everything together.
8. In a separate bowl, mix corn, chives, parsley, 2 eggs, salt, and black pepper. Combine well.
9. Gradually add 200g (about 1 cup) of flour to the mixture and mix until well incorporated.
10. Grease a baking dish with sunflower oil and evenly spread the vegetable mixture in it.
11. Bake in the oven at 200°C (400°F) for 30 minutes.
12. While it’s baking, prepare the cheesy topping by mixing 100g of cheese, 2 tablespoons of mayonnaise, 3 tablespoons of Greek yogurt, minced garlic to taste, and dill to taste.
13. After 30 minutes, take the dish out of the oven and spread the cheesy topping over the baked vegetables.
14. Return it to the oven and bake for an additional 10-15 minutes or until the topping is melted and golden brown.
