Zucchini and Rice Fritters
Ingredients:
For the Fritters:
- 1 cup rice (150-160 g)
- Salt (to taste)
- 2 zucchinis (grated)
- 1 onion (finely chopped)
- 1 egg (beaten)
- 1/2 tablespoon red sweet ground pepper
- 1/2 tablespoon red hot pepper (adjust to taste)
- 2 tablespoons wheat flour (20 g)

For the Garlic Yogurt Sauce:
- Yogurt (as needed)
- 1-2 garlic cloves (minced)
- A pinch of salt
Instructions:
Step 1: Cook the Rice
Cook the rice according to the package instructions. Once done, drain any excess water and set the rice aside to cool.
Step 2: Prepare the Fritters
Grate the Zucchini:
- Grate the zucchinis using a coarse grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.
Combine Ingredients:
- In a large bowl, combine the cooled rice, grated zucchini, finely chopped onion, beaten egg, sweet red pepper, hot red pepper, and wheat flour.
- Season with salt to taste. Mix everything well to form a thick batter.
Shape the Fritters: With your hands, form small fritters from the mixture, roughly the size of a tablespoon, pressing them lightly to flatten.
Step 3: Fry the Fritters:
- Heat a generous amount of cooking oil in a skillet over medium heat.

- Once cooked, transfer the fritters to a paper towel-lined plate to absorb any excess oil.

In a small bowl, combine yogurt, minced garlic, and a pinch of salt. Stir until smooth and well-blended.
