Indulge in the classic flavors of lasagna with a healthier twist! This Zucchini Lasagna recipe replaces traditional noodles with thinly sliced zucchinis, layered with rich ricotta cheese, savory meat sauce, and melted mozzarella. Perfect for a guilt-free dinner or a satisfying meal prep option.

Ingredients:(Servings: 6)
For the Zucchini Layers:

4 medium zucchinis, sliced lengthwise into thin strips

1 teaspoon olive oil

Salt and pepper, to taste

For the Ricotta Filling:

2 cups ricotta cheese

1 egg

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

For the Marinara Sauce:

3 cups marinara sauce (store-bought or homemade)

1/2 teaspoon red pepper flakes (optional)

Fresh basil, for garnish

For the Topping:

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Directions:

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and place the zucchini slices on the sheet in a single layer.

Brush both sides with olive oil and sprinkle with salt and pepper. Roast in the oven for 10-12 minutes to soften the zucchini slices. Set aside to cool.

While the zucchini roasts, prepare the ricotta filling: In a medium bowl, mix the ricotta cheese, egg, Parmesan cheese, oregano, garlic powder, salt, and pepper until smooth.

For the marinara sauce: In a small saucepan, heat the marinara sauce over medium heat.

Add red pepper flakes if using, and bring to a simmer.

In a 9×13-inch baking dish, spread a thin layer of marinara sauce on the bottom. Then layer zucchini slices, ricotta filling, and more marinara sauce. Repeat the layers until all ingredients are used, finishing with a layer of marinara sauce on top.

Sprinkle the mozzarella and Parmesan cheese over the top.

Bake for 25-30 minutes, or until the cheese is golden and bubbly.

Garnish with fresh basil before serving.
