Ingredients:
- Three cups of frozen or fresh corn kernels
- Two jalapeños, chopped finely
- One red bell pepper, chopped finely
- Half a red onion, cut finely
- one-fourth cup white vinegar
- two tsp sugar
- One tsp salt
- half a teaspoon of pepper, black
- 1/4 cup finely chopped fresh cilantro
Directions:
- Combine the red bell pepper, red onion, jalapeños, and corn in a large mixing basin.
- Mix the sugar, salt, black pepper, and white vinegar in a small saucepan. Over medium heat, bring to a simmer and stir until sugar is completely dissolved.
- After adding the vinegar mixture to the corn mixture, thoroughly stir.
- After letting the relish cool to room temperature, add the chopped cilantro and mix.
- To let the flavours marry, cover and chill for at least two hours, or overnight.
