Shrimp and Sausage Veggie Skillet

Ingredients:

For the Shrimp and Sausage:

  1. 1 lb shrimp, peeled and deveined
  2. 1 Tbsp olive oil
  3. 3 tsp minced garlic
  4. 1 tsp onion powder
  5. 1 tsp paprika
  6. Salt and pepper to taste
  7. Red pepper flakes to taste (optional, for heat)
  8. ½ lb smoked sausage, sliced

For the Veggies:

  1. 1 Tbsp olive oil
  2. 1 ¼ cups red bell pepper, diced
  3. 1 cup asparagus, cut into pieces
  4. 2 cups zucchini, diced
  5. 2 Tbsp chicken broth
  6. Salt and pepper to taste

Instructions:

  1. Prepare the Shrimp and Sausage:
    In a large bowl, toss the shrimp with olive oil, minced garlic, onion powder, paprika, salt, pepper, and red pepper flakes (if using).
  2. Heat a large skillet over medium-high heat. Add the sliced smoked sausage and cook until browned and heated through, about 4-5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the seasoned shrimp. Cook for 2-3 minutes per side, or until pink and opaque. Remove from the skillet and set aside with the sausage.
  4. Cook the Veggies:
    In the same skillet, add 1 tablespoon of olive oil.
    Add the diced red bell pepper, asparagus pieces, and zucchini. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
  5. Add the chicken broth and cook for an additional 1-2 minutes, until the broth has mostly evaporated and the veggies are coated.
  6. Combine and Serve:
  7. Return the cooked shrimp and sausage to the skillet with the veggies. Stir to combine and heat through.
  8. Season with additional salt and pepper to taste.
    Serve:
  9. Serve hot, either on its own or over rice or noodles if desired.
