Ingredients:
- 4 large starchy potatoes (Russet or Idaho work best)
- 2 tablespoons butter
- 1/4 cup milk (or cream for a richer flavor)
- 1/2 cup shredded cheese (optional, cheddar or mozzarella work great)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups breadcrumbs (panko for extra crunch)
- Oil for frying (vegetable or canola)
Instructions:
1. Cook the Potatoes:
Cut the potatoes into cubes after peeling. Simmer them in salted water for ten to fifteen minutes, or until fork-tender.
While the potatoes are still warm, drain and mash them.
2. Get the Potato Combination Ready:
- To the mashed potatoes, add the butter, milk, onion and garlic powders, salt, and pepper. Mix until creamy and smooth.
- Incorporate the cheese, if using, into the mashed potatoes. To make the mixture easier to handle, allow it to cool somewhat.
3. Form the potato spheres:
- Using your hands, form a little ball out of roughly 2 teaspoons of the potato mixture.
- Continue until every last ball of mashed potato has been created.
4. Make the potato balls bread:
- Arrange three bowls for breading: one for flour, one for beaten eggs, and one for breadcrumbs.
- After dredging each potato ball in flour, shake off any extra.
- Gently press the breadcrumbs into it after dipping it into the beaten eggs to ensure they adhere well.
5. Cook the balls of potato:
- In a deep frying pan or saucepan, heat the oil to about 350°F (175°C).
- Take care not to jam too many potato balls into the pan as you fry them in batches. Fry, stirring regularly, for 2 to 3 minutes, or until golden brown and crispy.
- Using a slotted spoon, remove the potato balls and set them on a dish covered with paper towels to absorb any remaining oil.
6. Present:
Serve the hot crispy potato balls with your preferred dipping sauce on the side. They go well with spicy aioli, sour cream, or ketchup.
