Green Chile Chicken Taquitos
I’ve been eating them for over 2 years and although I make tons of treats, this recipe is now my one of favorites ever!❤️
Ingredients:
* 2 cups cooked chicken, shredded (you can use rotisserie chicken)
* 1 can (4 oz) diced green chilies
* 1 cup shredded cheese (cheddar or Monterey Jack work well)
* 1/2 cup cream cheese, softened
* 1/2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* Salt and pepper to taste
* 8-10 small corn or flour tortillas
* Olive oil for frying (or you can bake them for a healthier option)
* Optional toppings: sour cream, guacamole, salsa, chopped cilantro
Instructions:
1. Mix shredded chicken, diced green chilies, shredded cheese, cream cheese, garlic powder, onion powder, salt, and pepper in a large bowl.
2. Warm corn tortillas in a skillet or microwave briefly to make them easier to roll.
3. Spoon a few tablespoons of chicken filling near the edge of each tortilla and roll tightly, repeating for all tortillas.
4. For Frying:
* Heat olive oil in a skillet.
* Fry the taquitos seam side down until golden and crispy (2-3 minutes per side).
* Drain on paper towels.
5. For Baking:
* Preheat oven to 400°F (200°C).
* Place taquitos seam side down on a baking sheet.
* Spray with cooking spray or brush with olive oil.
* Bake for 15-20 minutes until crispy.
6. Serve with toppings like sour cream, guacamole, or salsa.
Additional Tips:
1. Shred rotisserie chicken for quick prep.
2. Use toothpicks to keep taquitos rolled tightly.
3. Add jalapeños for extra spice.
4. Freeze before cooking for make-ahead meals.
5. Serve with a lime wedge for a fresh citrus kick.
