Lemon Herb Salmon and Avocado Quinoa Bowl

 Ingredients:
Salmon:
  1. 2 fillets, juice of 1 lemon
  2. fresh dill and parsley (chopped)
  3. 1 clove garlic (minced)
  4. 1 tbsp olive oil, salt, pepper

Quinoa Bowl:

  1. 1 cup cooked quinoa
  2. 1 avocado (sliced)
  3. 1/2 cucumber (sliced)
  4. 1/2 cup cherry tomatoes (halved)
  5. 1 cup baby spinach, chopped parsley, red onion (optional)
Dressing:
  1. 2 tbsp lemon juice
  2. 1 tbsp olive oil
  3. 1 tsp honey
  4. 1 clove garlic (minced)
  5. chopped parsley
 Steps:
Cook Quinoa:
  1. Rinse quinoa and bring to a boil. Simmer for 15 minutes, then fluff with a fork.
  2. Prepare Salmon: Combine lemon juice, dill, parsley, garlic, olive oil, salt, and pepper. Brush over salmon and grill for 4-5 minutes per side.
Make Dressing:
  1. In a small bowl, whisk together lemon juice, olive oil, honey, garlic, and parsley.
Assemble Bowl: Layer the quinoa, avocado, cucumber, tomatoes, spinach, and grilled salmon. Drizzle with dressing.
 Notes: Marinate the salmon for deeper flavor. Add nuts or seeds for extra crunch and texture.
