Lemon Herb Salmon and Avocado Quinoa Bowl

Ingredients:
Salmon:
- 2 fillets, juice of 1 lemon
- fresh dill and parsley (chopped)
- 1 clove garlic (minced)
- 1 tbsp olive oil, salt, pepper
Quinoa Bowl:
- 1 cup cooked quinoa
- 1 avocado (sliced)
- 1/2 cucumber (sliced)
- 1/2 cup cherry tomatoes (halved)
- 1 cup baby spinach, chopped parsley, red onion (optional)
Dressing:
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp honey
- 1 clove garlic (minced)

Steps:
Cook Quinoa:
- Rinse quinoa and bring to a boil. Simmer for 15 minutes, then fluff with a fork.
- Prepare Salmon: Combine lemon juice, dill, parsley, garlic, olive oil, salt, and pepper. Brush over salmon and grill for 4-5 minutes per side.
Make Dressing:
- In a small bowl, whisk together lemon juice, olive oil, honey, garlic, and parsley.
Assemble Bowl: Layer the quinoa, avocado, cucumber, tomatoes, spinach, and grilled salmon. Drizzle with dressing.
Notes: Marinate the salmon for deeper flavor. Add nuts or seeds for extra crunch and texture.
