Low-Carb Taco Soup
Here’s a flavorful, low-carb taco soup recipe that’s quick to make, with just the right mix of spices, protein, and veggies! ❤️
Ingredients:
* 1 lb (450g) ground beef (or ground turkey for a leaner option)
* 1 tbsp olive oil
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 bell pepper, diced (any color)
* 1 (10 oz) can diced tomatoes with green chilies
* 1 (6 oz) can tomato paste
* 4 cups beef or chicken broth (unsalted for better control over sodium)
* 1 tsp chili powder
* 1 tsp ground cumin
* 1/2 tsp smoked paprika
* 1/2 tsp dried oregano
* 1/2 tsp salt (adjust to taste)
* 1/4 tsp black pepper
* 1 cup shredded Goat cheese (optional, for topping)
* 1/2 cup sour cream (optional, for topping)
* Fresh cilantro or parsley, chopped (optional, for garnish)
* 1 avocado, diced (optional, for garnish)
Instructions:
1. In a large pot, heat the olive oil over medium heat.
2. Add the ground beef and cook, breaking it apart, until browned.
3. Drain any excess fat if needed.
4. Add the diced onion, garlic, and bell pepper to the pot.
5. Sauté for about 5 minutes or until softened.
6. Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
7. Add the diced tomatoes, tomato paste, and broth. Stir well to combine.
8. Bring the soup to a boil, then reduce the heat to low.
9. Cover and let it simmer for 20–30 minutes, stirring occasionally to meld the flavors.
10. Ladle the soup into bowls.
11. Top with shredded cheese, sour cream, diced avocado, and fresh cilantro if desired.
Additional Tips:
1. Add a pinch of cayenne pepper or extra green chilies for more heat.
2. For a creamier soup, add 4 oz (half a block) of cream cheese when adding the tomato paste and broth.
3. Sprinkle with jalapenos, or a squeeze of lime juice for a fresh twist.
